If you've ever gone out to Paradise Valley, you've been to Follow Your Nose BBQ. This place is the epitome of good BBQ and their service is truly top notch. They cater weddings and they do an excellent job! To be honest, their BBQ is my absolute fave and worth the hour and a half drive (one way). So getting them to come and cater your wedding would be an amazing idea.
